Note: Part 1 & 2 must be taken in order to qualify to take the CDM exam offered through the Association of Nutrition and Food Service professionals, ANFP. Students are eligible for pre-professional membership in the ANFP

What You'll Learn

Training will include both course work and lab experience working with a Registered Dietitian. (130 Hours)

Training Includes:

  • Learning to work in partnership with registered dietitians to purchase, prepare, and deliver balanced nutritional meals within a budget
  • Analyze the basic nutritional needs of your clientele
  • Provide meal service while satisfying client preferences
  • Assess dietary intake for energy balance, sustainability, and nutritional needs for humans in various stages of life
  • Apply nutrition knowledge to clinical, community, research, and food service situations
  • Effectively and efficiently supervise noncommercial food service facilities while applying nutrition principles and ensuring food safety
  • Nine hours of Nutrition Prerequisites
  • Ten hours of Lab Experience with a Registered Dietician

Admission Requirements:

  • Must be at least 18 years of age
  • Provide proof of high school completion (high school transcripts, copy of high school diploma, or copy of completion of GED requirements)
  • Demonstrate reading proficiency either by college transcripts, a computerized placement test, or the CASAS reading test

Cost of Class:

  • Tuition/Registration: $180 per course
  • Text: $577.76 (subject to change)

Higher Education Emergency Relief Funds

Higher Education Emergency Relief Funding (HEERF) will be distributed to Continuing Education students enrolled in this class for Summer 2022. These funds will be distributed as a direct payment to students to help offset the cost of the class including tuition, books, transportation and other related fees.

Work-Based Learning

Nutritional Dietary Manager Part 2 (150 Hours)

Gain on the job experience through this hands-on learning experience with an internship within a long-term care community, assisted living community, hospital, school or correctional facility. The field experience will be supervised by a Registered Dietitian. Hours will vary. Clinical dates will vary.

Note: Those eligible for Pathway IIIb, with two years of work experience in a managerial or supervisory capacity in non-commercial foodservice that includes third-party oversight may be exempt from this part.
